Oven baked tofu

This simple and easy way of baking tofu really resembles traditional Balkan lunches in which veggies, potatoes and meat are seasoned, lined in a baking tray and baked together in an oven. Here, of course, we skip the meat and use our dear tofu instead.

Ingredients

  • block of tofu (200-250 g)

  • 2 tbsp soy sause

  • 2 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp smoked paprika powder

  • 1/2 tsp garlic powder

  • 1.5 tsp cornstarch

  • potatoes and veggies of choice



Preparation

  1. Pat the tofu dry with a paper towel then tear it into pieces (or cut into cubes).

  2. Put it in a bowl, add salt, pour olive oil and soy sauce, then sprinkle with paprika and garlic. Mix well or shake the bowl.

  3. Then sprinkle with the cornstarch and shake again so that the cornstarch covers all the pieces. It will make the tofu crispy on the outside.

  4. Place in a tray with chopped and seasoned vegetables - for example: potatoes, carrots and onions with rosemary.

  5. Bake in an oven heated to 185 degrees Celsius for about 40 minutes or until the potatoes are baked.


Notes


This recipe uses tofu from Annapurna - a small Croatian company that produces organic foods based on soy, nuts and wheat without GMOs, pesticides, preservatives and artificial flavorings.
